Mazah

These are hot or cold starters of Lebanese origin. The main dishes may be very meat heavy, but the mezze you can find in Jordan can make a vegetarian’s feast. You can for exemple find hummus, tabouleh, foul, kubeh…

Hummus is a dip/spread that is made from chickpeas. In fact, hummus is the Arabic word for chickpea. It is one of the oldest foods, dating back to ancient Egypt, and is generally served with olive oil.

Tabouleh is a salad made of wheat, tomatoes, mint and parsley.

Foul is fava beans cooked until soft and mixed with olive oil, garlic and lemon.

Kubbeh is a ground lamb and wheat meatball stuffed with olives and peanuts, then fried.
